LARGE PACK 100G (SERVES 16-24 AS A SIDE DISH)
TO MAKE YELLOW COCONUT RICE, YOU WILL NEED:
1 tbsp olive oil,
1 cup / 250g long grain rice,
¼ sachet spice mix,
2 tbsp sultanas ,
175ml water,
220ml coconut milk
Rice cooker method: Put all ingredients into a rice cooker. Mix together and turn rice cooker on.
Stove top method: bring water and coconut milk to the boil. Add remaining ingredients. Reduce heat and cover and cook for 15-20 mins or until tender. Stir occasionally to avoid catching on pan
