Spiced Butternut Pumpkin spice mix.  

complete spice blend to create this delicious side dish.

3tbsp olive oil, 1kg diced butternut (skin on),  2 tbsp greek yoghurt,  2 tbsp spice mix

 

Heat oil in pan, add butternut.  Cook for 3 minutes until it starts to brown.  Add 140ml water and 1 tbsp of  the spice mix.  Cover the pan and simmer for 10 minutes or until tender.  Add remaining spice mix and yoghurt.  Stir and simmer until combined. 

 

Serve with dollop of yoghurt and garnish with coriander leaves.
